  1. Covers are how many dinners are served.  It could be a 30-seat restaurant that does two "turns" in a night, for example.  Imagine the cover being lifted off a dinner plate.  

    A "top" is a the number of people that can sit at a table.  A two-top is a table for two. If you have 30 two-tops, filled for a single seating at dinner, you could do sixty covers.
