  1. If could be any number of things, but some general tips on four courses should be as follows,

    1)  Four courses can be a lot, so make sure each dish isnt too big or heavy if you want your guests to enjoy everything, and not to feel obliged to eat more than they normally would.  You dont want to go the other way and have hungry guests after desert!

    2)  make sure there isnt any repetition if you can - i.e dont serve fish as the starter, then fish as the main course.

    Seasojnality is also important - not only will produce in season be cheaper, it will be at it's best!
