What does black bean sauce taste like?

Im going to PF changs tomorrow night, and I want to try the Chicken in Black Bean Sauce, but what does it taste like? Spicy, sweet, etc?

  1. It tastes like black beans.  Ask them for a sample before you ruin the order with something you don't like.  The will be more than glad to do that for you.


  2. Traditionally, those kind of black beans are fermented... so don't think black beans like you would find in something like Mexican cuisine.

    The taste is hard to explain, but to me the flavor of the fermented bean is pretty strong.  A little bitter even.  But usually, it goes in a type of sauce similar to something like Beef and Broccoli.

    Just my take.  Others may disagree.

  3. The black bean sauce is already diluted added water spices like garlic & etc. The black bean it self was fermented so it once had this pungent salty taste to it. But its already diluted so its milder & the salt taste not as salty or pungent because they already cooked & diluted it into a sauce, try its just the sauce to add flavor to the chicken.

  4. Just tell the waiter to go easy on the black beans. There are other ingredients in the sauce that will give it flavor.

    The black beans are soaked and rinsed in fresh water to reduce the saltiness. But some restaurants use black beans that are preserved dry in salt, and that type remains salty even after rinsing.

  5. Definitely try it - but be warned it's not for everyone. It can be extremely pungent, although I've never eaten at PF Changs (it's Westernized Chinese food, which I frown upon).

    Chinese black beans are fermented and are salty, pungent and beany... so be warned. The beans are usually mingled with garlic and the sauce in general is sweetened...
