Ev training is a way to train to help certain stats. Each pokemon has 510 ev "slots" the maximum you can put in one slot is 255 but 252 is the usual way to go if you are going to max out those slots. Certain pokemon give certain ev's and for every four ev's you put into one stat it's stat will be 1 overall highter when it reaches lvl. 100.
