  1. To check for imperfections, such as knotholes, splits, etc. The better looking it is, the better the grade. I have cut cherry veneer for over ten years at a veneer plant.

After boards have been cut and milled, they are graded visually.  A person watches the boards go by, and grades them as clear, select, #1, #2, #3, etc. for hardwoods, and construction, stud, standard, utility, or economy for softwoods.  The grades are determined by knots, cupping, wane, bow, crook, etc.  Hope this helps.
