they're usually talking about wild animals like deer or quail. it kind of has a weird taste.  i actually don't mind it, but some people do.  its hard to describe the taste exactly, a little like too meaty tasting kind of . its weird. its kind of like trying to describe what red looks like without saying what things are red.  but gamey, they mean it tastes wild and not really marinated or prepared in a way that cuts down on that natural taste.

If you've ever eaten a wild animal, it has a flavor NOT like a farm raised animal. You taste the meat that was fattened on leaves and bark, and whatever else your dinner ate while it was alive. Farm raised generally all eat the same stuff, and therefore all generally taste the same when you eat them.

If the deer is standing still, and you kill it instantaneously. It will have nice meat. It wil be tender and no smell. Nice venison.

Now let us assume that dear was running, and it did not die immediately. The muscles will tense up from pain. The meat will get tough. The sweat glands will become active releasing a bad odor. The meat is now gamey. It has the odor from sweat glands.

You can try to neutralize the odor by adding a lots of garlic, cumin powder, oregano.. You got it.. The spices will mask the odor and you will be making deer chili

When I have heard this comment, it has invariably meant that the meat in the dish is getting ready to turn, and the dish's edibleness is in serious question. Generally, this is said and then no further forays into the dish are ventured.

It means the flavor(usually a game meat) has a robust, earthy flavor, with a sweet rotting flesh undertone.  Usually the basis is drawn from our good friend BEEF. We all know what that tastes like!
