What does it mean when they say "Aged Meat"?

I have heard of wine being stored, but how do you "AGE" meat?

  1. usually this means cured most commonly with salt


  2. aged meat is meat that a restuarant gets from distributer and they put in a room at a controlled tempature for about 21 days before serving .becuase of the temp it breaks down the nerves of the meat and becomes very tender.if you saw the meat after aged you probably would not eat it ,but it is safe to eat and taste great

  3. Ages meat is a few things.  For example, ham or Italian salami, but "aged meat" can also be beef steaks aged in the fridge for several weeks exposed to "cold dry air".  

  4. it was aged under special conditions before it was cut into steaks. some fancy restaurants age beef up to 21 days. it is supposed to improve flavor and tenderness
