What does oil add to salad dressings?

it really doesn't taste like much. You get much more flavor from the other things like spices and vinegar. So why so much oil? thanks.

  1. adding olive oil both increases the dietary intake of healthy fats but it also slows gastric emptying or the amount of time that it takes foods to migrate from the stomach to the lower GI.  this keeps you feeling full longer.  salads that general lack proteins and/or fats don't provide much energy or keep you feeling satisfied for long.
