What does puerco pibil taste like ?

  1. "Cochinita Pibil" Well its not spicy = hot, but is IS spicy = full of spices. It is pork marinated in a sauce of ground achite seed, garlic, bay, sometimes oregano and/or cumin and the juice of special sour oranges from the Yucatan. (It is therefore once in a while too "sour" but it is never in my experience "sweet" maybe that is a special kind, but not the kind found everywhere in Mexico City!)

    After the marinade, it is wrapped in Banana leaves and tin foil and slow cooked for several hours. The pork can be shredded, served in large chunks or chopped into bite size pieces, shredded is the most common.

    It can then be served with Mexican white rice or especially in tacos. It is often served with cooked red onions but be careful sometimes the onions have yellow habanero chilis in them - very hot! It is REALLY delicious and one of the foods from Mexico that you should definitely try!

  3. Actually its called "Cochinita Pibil", a traditional dish form the state of Yucatan. It is pork marinated in a sweet sauce, its not spicy.

    They serve it alone, in a "torta" (in bread like a sandwich) or in "tacos" (in a tortilla).
