I think it is saying that science helps romantics not get too far over their heads in love. It shows facts rather than just basing life on feelings. It says then that romance is good for scientists because it makes them realize that there is more to the world than science. That sometimes, facts cannot explain how we feel.

The scientist keeps the romantic honest - The romantic has to remember there is a reality.  Dreams are great but you still have to live in the real world.

The romantic keeps the scientis human - You still need to dream.  Instead of keeping you head in a lab and looking at things black and white, he needs to see some color in his world.
