What does "in and out" mean in bartending?

i just started bartending/beverage managment classes tonight and we have to write the name of the drinks along with the "action" on the index cards. alot of the martini drinks has "in and out" written next to the ingredients...i was wondering what that meant. is it how you prepare the drink? im not quite sure what they mean by "action" either. thanks for any help i have to have these cards finished by tomorrow.

  1. We've always done in and out vermouth in a martini.  It's an ingredient that can be overpowering if mismeasured.  We add it first, coat the glass so to speak and dump it.  That way you have vermouth in the glass and the amount is consistent.   There are other uses for in and out as well...
