if you mean middle hitter hit and block the ball but if you are talking about middle back they dig the ball

Do you mean setter?   The setter gets the second ball and tried to use their hands and put the ball in play toward the hitter.  It is called a "set" as in set up the play for the hitter.

By center, I assume you mean a middle blocker. Their job is essentially to be a wall. Because of their (usually) tall stature and/or good vertical, they are the main blocker. They also hit, and because of their height can slam it down hard.
