What does the phrase "the other white meat " mean?

It means pork instead of chicken.  It was a slogan created by a commercial to encourage people not to eat beef which was looked at as less healthy than "white meats".

It was originally an ad for Pork, from the National Pork Council. "The other white meat" meant Pork was a low-cholesterol meat, in addition to the "original" white meat, chicken. Now it has become a phrase to mean something that is very different from another thing, but can be a substitute for it, usually in a joking manner.

i believe chicken is the original "white meat", but this term is also used in reference to pork.
