What does this garnishing term mean, "curls"? ?

It can mean a few different things. With chocolate it means to take a good quality bar chocolate, room temperature and shave into curls using a good quality potato peeler. It takes a little practice to do this well. Some vegetables can also be used as a garnish and can be curled in the same manner as the chocolate, if left to soak in salt water they will also curl.
