Is it saying that my room will be reserved until 7:00 am the day i arrive? meaning if i arrive there at 8 my room will be gone?

It means that if you are supposed to arrive on, say, Monday, and you are late, your room will be held until 7 AM on Tuesday. Then they will give it to someone else.
