What does turmeric do in canning??

Help, i'm new in canning and learning something every day. I believe it makes vegetables yellow? Is there a substitute for it, and do i actually need it? There must be some "canners" out there!

  1. It's just for colour and flavour like any other spice.  Not needed for the success of pickles.


  2. Turmeric is also called "poor man's saffron", because it imparts a deep golden yellow colo, approaching orange, depending upon how much you use.  It ahs a nice flavor as well.  Depending upon what you're making, you could probably leave it out.

  4. That is correct, often used in curries.

    Some will say saffron but that is extremely expensive.

    If you don't mind the lack of colour, skip it.
