What does with enchiladas?

im making my boyfriend enchiladas tonight, and i was wondering what else to serve with them. any help?

a cool salad spinach leaves on the plate, a scoop of cottage cheese on that, surrounded by tomato wedges, with a sprinkle of paprika on top of the cottage cheese.

If you are really ambitious make sopapillas, refritos, and seasoned rice.

I would make rice and beans with them. When I make enchiladas that's what i always make and maybe a little salad.

how about mexican rice?  cook rice as you normally would, just before it is done stir in some salsa, maybe chopped cilantro, scallions......or pinto beans,  season with a little lime juice and cilantro.....a little salad like in mexican restaurants....iceburg, chopped tomato, salsa, dollop of sour or guacamole....don't forget the margaritas!
