Question:

What else to do with apples????

I went apple picking and have like a whole crisper bin full or apples (its the size of the whole bottom of the fridge. I have made an apple crumb type dish. I am gonna make caramel apples ( i dont like candied) What else can I do with them... If you have a recipe or idea please tell me. I dont want to make apple sauce either.

    Also, warm apple compote is so delicious along side baked brie.  Here's the recipe for baked brie http://homecooking.about.com/od/appetize...  and the recipe for apple compote  http://www.foodnetwork.com/recipes/emeri...  I would also add some walnuts or pecans to the recipe.

    Or how about just baking them?  I core my apples (but don't make a hole all the way through) then stuff a little butter, some brown sugar, cinnamon, nutmeg and some walnuts into the hole, and put them in a 350 degree oven for about 30 minutes.  It's really delicious and comforting.

    1 box Betty Crocker® SuperMoist® spice cake mix

    Water, vegetable oil and eggs called for on cake mix box

    2 cans (21 oz each) apple pie filling

    1 container Betty Crocker® Rich & Creamy butter cream frosting

    1. Heat oven to 350°F (325°F for dark or nonstick pans). Make and cool cake as directed on box for two 9-inch round pans.

    2. Place each cake on serving plate. Spread 1 can pie filling on each cake to within 1/2 inch of edge. Frost side of cakes with frosting. Spoon remaining frosting into decorating bag. Pipe frosting around top edge of each cake. Store tightly covered in refrigerator.

  4. So many things can be done with apples.  Plus they keep for quite some time.  Raisins and walnuts complement apples in most dishes.

    Waldorf salad, baked apples, apple dumplings, apple pie, apple crisp, apple butter, apple cider quickly come to mind.

  7. Try apple pie. Or apple cake. I've never heard of it before but my mom suggested it and it's really good. It's just cake with apples baked right in.

  8. I love baked apples.  Just use your corer to take the core out, place apple in a small cake pan. Fill that hole with brown sugar and put a sprinkle of cinnamon and a pat of butter on top of it.  Cover with aluminum foil and bake for about 45 minutes at 350.  Serve warm with whipped cream or ice cream.

    Crust

    2 1/2 cups all-purpose flour

    4 tsp. sugar

    1/4 tsp. salt

    14 Tbsp. (1 stick & 6 Tbsp.) cold butter, cubed

    1 large egg, lightly beaten with 2 Tbsp. cold water

    Filling

    2 Tbsp. freshly squeezed lemon juice

    3 lbs baking apples

    2/3 cup sugar, plus more for sprinkling on top

    1/4 cup unsalted butter

    1/4 tsp. cinnamon

    1/2 tsp. nutmeg

    1 large egg, lightly beaten

    The Crust

    Make the dough by hand. In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, work the butter into the dry ingredients until it resembles yellow corn meal mixed with bean sized bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.

    Make the dough in a food processor. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined. Add the butter and pulse until it resembles yellow corn meal mixed with bean size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand.

    Form the dough into a disk, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.

    The Filling

    Put the lemon juice in a medium bowl. Peel, halve, and core the apples. Cut each half into 4 wedges. Toss the apple with the lemon juice. Add the sugar and toss to combine evenly.

    In a large skillet, melt the butter over medium-high heat. Add the apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium-low, and cook until the apples soften and release most of their juices, about 7 minutes.

    Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 10 minutes.

    In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely. (This filling can be made up to 2 days ahead and refrigerated or frozen for up to 6 months.)

    Cut the dough in half. On a lightly floured surface, roll each half of dough into a disc about 11 to 12 inches wide. Layer the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.

    Place a rack in the lower third of the oven and preheat the oven to 375˚ F.

    Line the bottom of a 9-inch pie pan with one of the discs of dough, and trim it so it lays about 1/2 inch beyond the edge of the pan. Put the apple filling in the pan and mound it slightly in the center. Brush the top edges of the dough with the egg. Place the second disc of dough over the top. Fold the top layer of dough under the edge of the bottom layer and press the edges together to form a seal. Flute the edge as desired. Brush the surface of the dough with egg and then sprinkle with sugar. Pierce the top of the dough in several places to allow steam to escape while baking. Refrigerate for at least 15 minutes.

    Bake the pie on a baking sheet until the crust is golden, about 50 minutes.

    Cinnamon Apple Muffins

    1 1/2 cups all-purpose flour

    3/4 cup sugar

    1 1/2 teaspoons baking powder

    1 teaspoon ground cinnamon

    1/2 cup milk

    1/3 cup  butter, melted

    1 egg, slightly beaten

    1 cup finely chopped apple

    Heat oven to 375°F. Combine, flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened.

    Spoon batter into greased 12-cup muffin pan. Bake for 18 to 23 minutes or until lightly browned. Let stand 5 minutes; remove from pan.

    Apple Pie Pockets

    INGREDIENTS

    3 sweet apples -- peeled, cored and thinly sliced

    2 tablespoons sugar

    2 tablespoons flour

    pinch of salt

    1 teaspoon apple pie spice

    1 tablespoon vanilla extract

    1 (15 ounce) package prepared, unbaked pie crust, thawed

    milk

    1 egg, beaten

    DIRECTIONS

    Preheat oven to 375 degrees F (190 degrees C).

    In a bowl, toss apple slices together with sugar, flour, salt, apple pie spice, and vanilla extract until evenly coated.

    Lay pie dough flat on a lightly greased baking sheet. Pile apples on one side of dough, leaving a 1 inch border. Brush border and opposite half side of dough with milk. Fold dough over apples, being careful not to over-stuff or the dough will tear. Fold over edges and pinch together to seal. Cut several small slits in the top of the pocket with a sharp knife, then brush top with beaten egg.

    Bake in the preheated oven for 40 minutes, or until flakey and golden brown. Serve warm, or at room temperature.

    Apple Pie Bread

    INGREDIENTS

    3 cups all-purpose flour

    1 cup white sugar

    4 teaspoons baking powder

    1 teaspoon salt

    1 teaspoon ground cinnamon

    1 teaspoon ground cloves

    1 1/2 cups milk

    1 egg

    2 tablespoons vegetable oil

    1 1/2 cups diced apples

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x5 inch loaf pan.

    In a large bowl, combine flour, sugar, baking powder, salt, cinnamon and cloves. In a separate bowl, mix together milk, egg and oil until well blended. Stir milk mixture into flour mixture. Fold in apple. Pour into prepared pan.

    Bake in preheated oven for 1 hour 20 minutes, until loaf springs back when touched lightly in center. Cool in pan 10 minutes before removing to wire rack to cool completely.
