I like the Foosball and Snooker answer. I'd add darts, billiards, and pool 8/9 ball. Bocce might be cool also.

I would love to see the games represent the capabilities of the military.  This was the original Olympic games.  The short distance sprints were in full battle dress.  We still the remnants in the track and field events-javalin, shot put, hammer, high jump, steeple chase.  Wrestling.

The Modern Olympics brought us the pentathlon, which I think is the Military games.  It includes fencing, swimming, running, horses, and guns.

In addition to the Pentathlon, It should be expanded into the dodecathlon- 12 games in onecompetitionn. Here are the seven others.

Pugil sticks.

Open forum Martial Arts.

john boat rowing.

Paint ball cowboy style duels.

high power long distance rifle shots.

IDPA or IPSC shooting.

COTS 4wheeler race.

We should also have some of the X games in the olympics. But, I only like the games that can be decided objectively.  I want sports with referees, not judges.
