  1. Not much

    A good Santoku knife, a Bamboo mat.   Perhaps a large wooden bowl for making the sushi rice.

  2. No equipment just a good bamboo mat for rolling the Nori.

  3. A makisu bamboo rolling mat, a rice cooker (of course), urashima nori (which the rice is spread on), a VERY sharp knife; otherwise  your sushi is smashed flat, and  of course a korin geta (sushi rice spatula). Also, soy sauce and rice vinegar are very essential in making sushi.

    It's made the same way today. NOTHING has changed. You can watch any sushi video.

    squish some vinegared rice, slap some protein or veg on it, add seawood if desired. That's pretty much it.

    Then again. There's layered sushi. Throw everything in a box and squish it. That's made the same way too.
