  1. Monomers are already broken apart: maybe you meant polymers? Even then, you have to say which polymer for anyone to answer this

I belive you mean to break polymers apart..well for proteins to peptides and eventually amino acids ..one uses proteases  such as trypsin, pepsin, chymotrypsin, elastase , carboxypeptidases , amino peptidases. and di and tripeptidases. For polysaccharides ( polymeric sugars ) one uses amylases for alpha 1, 4 and 1, 6 bonds   and cellulases for beta 1, 4 linkages.  Triglycerides  one uses lipases, for DNa and RNA one uses special nucleases ( DNase, RNase)
