  1. mostly chopping food, cleaning food, anything that would need to be taken care of before the actual cooking of the food (basically the dirty work).  :p


  2. "sous" means under, the sous chef is ranked underneath the executive chef. Directly involved with food production and supervision of daily kitchen tasks by the cooks.
