What exactly salaan means.i know its used in food industry, and its kind of the gravy or curry.?

i know its a food gravy or sauce or type of food very popular in parts of india such as hyderabad. but i am after the meaning of salaan. thank you for your help.

Its  a curry paste used in Pakistani cooking, google for recipe.

Salaan is Urdu for gravy / curry. That is why you notice its use in parts of Hyderabad ( like you rightly mentioned ), Old Delhi, Lucknow and in Pakistan. It is any dish with which you eat your chappati ( breads ) and rice. It is not any particular dish and can be both vegetarian and non - vegetarian.

I think "salan" refers to curry/gravy but more so, this is a method of cooking, high heat is used initially and then the dish is simmered low and slow.  This cooking method heightens & concentrated the flavors of the dish.  It is used mainly in Pakistani dishes.
