  3. you got to try this .. heres what you need....

    750 g fish

    2 cloves

    1 1/2 teaspoons garlic

    1 teaspoon salt

    1/2 teaspoon ginger

    1/2 teaspoon turmeric

    1/4 teaspoon black pepper

    Chili powder, optional

    Lemon juice

    Oil for frying

    Fresh coriander leaves to garnish

    lemon wedges to garnish

    heres what you do.....

    Wash fish and dry on paper towels.

    Crush garlic with salt, mix with ginger, turmeric, pepper, chili powder and enough lemon juice to make a paste.

    Rub this well over the fish on both sides, cover and leave for 20 minutes.

    In a large frying pan, heat just enough oil to cover base of pan and when hot, put in the fish steaks.

    Fry on medium heat until cooked on one side, then turn slices carefully with a fish slice and fry other side.

    Serve on platter garnished with coriander leaves and lemon wedges.

Well as a former chef who worked in Jamaica for a while and did cook a small amount of fish there, they have over 100 varietys, I would look for ones like Kingfish, Grouper, Snapper, Porgies and fillets like halibut and either scrod or regular cod, salt cod is nice to but hard to work with unless your experienced.

    To make it I would season it with a little spice, a mix of salt, pepper, paprika, garlic, a bit of of allspice if you have it or a jerk spice is nice to but a small amount in the other seasoning, rub it with oil and a bit of lemon or lime juice sprinkle on the spice and either bake, pan fry even wrapped in foil and cooked on the BBQ, kingfish and grouper steaks can be done right on the grill.
