What fish makes caviar? and , How many eggs make a tin of caviar? I want to know because I am thinking of making a farm of them!

All fish eggs are caviar.  Beluga is not common, it is dreadfully expensive which is why it is so $$$$$.

The so called best caviar comes from sturgeon in the Black sea from Russia and Iran.  About four or five varieties available, Osetra,Sevrugia are two.

I happen to be partial to less pricy caviar, and quite a few of them are wonderful.  Try some tobiko in a Japanese Sushi house, see if you like it.  Tobiko eggs are mild, often used on a variety of sushi.  Capelin, Salmon Roe, Tarama are other eggs, different styles, different fish.

Most markets have a variety of very reasonable, mediocre roes (another word for the fish eggs) tend to be okay, but salty.

I use the small Romanov black often instead of lox (smoked salmon..delicious too) you can buy pretty much any place.  Try it with cream cheese on rye or a bagel, or bagel chip.

Be careful...Even cheap caviar is not cheap, and tends to get moldy, so make sure you use clean spoons.

Stergeon, primarily.  Also baluga, cod, and salmon.  Tins are sold by weight (usually in ounces), not number of eggs (trust me, trying to count out a certain number of eggs wouldn't be worth the effort... they're tiny little things).
