  1. Cookies

  2. I worked with a diabetic woman and for her birthday cake, she always requested angelfood cake, fresh berries and low-sugar frozen whipped topping. The cake is fat-free.

  3. you could dip strawberries (halfway)in a little melted chocolate ,and let them set. it looks very sophisticated, but the strawberries make it taste very sweet,so you don't need much chocolate. i had them in a hotel room on valentines day, they were delicious!.

  4. A pot luck lunch is nice....everyone brings in something, casseroles, salads, fav. desserts.

  5. You didn't say WHY you don't want cake or ice cream.  Is she on a diet, diabetic, or is someone else bringing that? ..... Why don't you hollow out 1/2 watermelon and refill it with the cubed melon, berries, fresh pineapple; and garnish with sliced starfruit and fresh mint leaves

  6. At my work we always buy a box of Celebrations chocolates (mini individually wrapped chocolates like Mars, Bounty, etc) and put them out for everyone to dive in at will.

  7. Here is a light version of a classic Italian favorite- Tiramisu! Very grown up, and not so bad for you. Mmm.

    INGREDIENTS:

8 ounces semi sweet chocolate, finely chopped

1/4 cup fat free egg substitute

    1 cup sugar

    1 1/2 teaspoons vanilla

1 8-ounce package fat free cream cheese, cut into small pieces

1 8-ounce frozen light whipped topping, thawed

    1 tablespoon instant espresso powder

    1/4 cup hot water

    1 cup cold water

1 fat free pound cake, cut into 1/2 inch slices

    DIRECTIONS:

(food processor can be used to finely chop chocolate ahead

of time and set aside). In food processor with metal blade,

    process egg substitute and sugar for 30 seconds. Add vanilla;

process 1 minute or until pale yellow. Add cream cheese pieces,

a few at a time, processing until smooth. Transfer mixture to

medium bowl. Cover; refrigerate 1 hour. Fold whipped topping

into cream cheese mixture. Set aside. In large shallow dish,

dissolve espresso powder in the hot water; add the cold water.

Quickly dip cake slices into espresso, turning to coat all sides.

Arrange slices in bottom of 13x9 inch baking dish or 12 cup

shallow dish, smoothing with fingers to mold cake slices

together. Sprinkle with half of the chopped chocolate. Top

with chilled cream cheese mixture. Sprinkle with remaining

chocolate. Cover; refrigerate at least 3 hours or overnight

    before serving. Store in refrigerator.
