  1. Grilled meats, wild boar, chicken, duck, fish and shellfish, tons of different veggies, soups, beans, bread, cheese, rice (risotto), corn meal (polenta), mushrooms.  They eat a lot of pasta, but not as the main course.

    Southern Italy and the region of Sicily tend to follow a very mediterranean diet, consisting of fish, olives and their oil, nuts and warm climate fruit.  Figs are common.  Tomatoes play an important role.  In the south, pork, chicken, lamb and rabbit are commonly eaten forms of meat.  

    Grapes are grown all across Italy to produce a wide variety of wines, each to their own region.  The same goes for cheeses, which are also very popular.  

    Here is an authentic tomato sauce recipe that you can try that follows the general rules of Italian food: simple recipes, excellent ingredients!

    Ingredients:

        * 10 medium tomatoes  

        * 2 ounces olive oil  

        * 1 medium onion, diced  

        * 1 teaspoon garlic, minced  

        * 2 teaspoons basil  

        * 1 teaspoon oregano  

        * Salt and pepper to taste  

    Method

    Makes about 1 quart. Remove the core from the tomatoes. Plunge the tomatoes in boiling water for 5-10 seconds. Allow to cool. Peel each tomato. Place a colander over a bowl. Cut the tomatoes in half and remove the seeds over the colander. Reserve the liquid and the tomato pulp and set aside. Discard the seeds. Heat the oil in a heavy saucepan over low heat. Add the onion and garlic and cook until just soft. Dice the tomato pulp and add to the pan. Add the reserved liquid, basil, and oregano. Simmer for 1 1/2 to 2 hours, stirring frequently. Check seasonings. Refrigerate or freeze.

  4. People often think of Italians as all sitting around stuffing their faces with pasta.

    Actually, pasta dishes are more in the south .  Naples and below.  Up North,  you'll actually find more vegetarian fare.........Torte Verde, and basillico based things, .....Pesto...... , while Florence,  is actually famous for Steak Florentine!

    All depends where in Italy you live.   And people seem to forget that Italy, is almost all COASTLINE.........which means most places thrive on SEAFOOD, and fresh catch of the day.

    Ya never see Italians in Hollywood movies sitting down to a nice fish dinner....but they enjoy some of the finest seafood in the world.

  6. When I was there, I was amazed at the different types of pizzas - apple with cheese, pear with different cheeses...etc

    Risotto was also a big thing - different regions = different risottos.

    I lived in a little town for a while and most families would go to the bakery daily to pick up a fresh loaf of bread.  They would then head to a store for meats and cheeses and then head to the vegetable grocer for their produce.  I guess they eat a lot of bread, tomato, cheese and meat sandwiches hehehe.  I started to do this too since it was all so yummy!

  7. Italian... anything with Lott's of herbs specially parsley and oregano... I think there main thing is Pasta...
