Paris is most famous for it's haute cuisine - luxury foods; dishes made with much cream & butter.  Elegant sauces and expensive cuts of meat or offal.  They also enjoy very delecate and refined desserts.  

You can sometimes stumble onto a small cafe that will serve you peasant foods such as casseroles, stews, sausages etc, the foods of the provinces.

Unfortunately there is also a huge amount of over-priced food to match over-blown ego's as well, when dining out in Paris.  Many think they are the next Albert or Michel Roux and are clearly not anywhere near that level.  But that being said, even the truckers at truck stops eat amazing meals - far superior to what you will find in most diners in the States or chip shops in London.  It's all relative.
