What food is this?

So I have to do a 25 person meal and for an App I wanted to do this thing I saw, where it's rice and other veggies in a leaf of lettuce but I don't know what it's called or where to find Recipies. A name of the item and a link to a recipie would be greatly appreciated =D

  1. I think it is called stuffed grape leaves, and it is an African inspired dish, the recipe I am not sure, but you should probably find it, or something similar on www.foodnetwork.com

  3. It might be San Choy Bow, a Chinese/Vietnamese dish of minced meat (chicken, pork prawn) and finely diced vegetables served in lettuce / wombok cabbage cups

    Its very easy to make and popular

    Another possibly is goi cuon, fresh vegetables in rice paper - also called a fresh spring roll

    It couldn't be dolmades, lettuce would not stand up to the cooking they require

  5. I think you're talking about dolmas (dolmades). They are a Greek stuffed grape leaf. SO GOOD! Here's a recipe scaled for 25 people.

    INGREDIENTS:

    3 tablespoons olive oil

    6 onions, minced

    4-1/2 cups uncooked white rice

    1/4 cup and 2 tablespoons

    tomato paste

    1/4 cup and 2 tablespoons

    dried currants

    1/4 cup and 2 tablespoons pine

    nuts 3 tablespoons ground

    cinnamon

    3 tablespoons dried mint

    3 tablespoons dried dill weed

    1 tablespoon ground allspice

    1 tablespoon ground cumin

    3 (8 ounce) jars grape leaves,

    drained and rinsed

    DIRECTIONS:

    1. Heat oil in a medium saucepan over medium heat. Saute onions until tender. Stir in rice and hot water to cover. Cover and simmer until rice is half cooked, about 10 minutes.

    2. Remove from heat and stir in tomato paste, currants, pine nuts, cinnamon, mint leaves, dill weed, allspice and cumin. Let mixture cool.

    3. Prepare a large pot by placing an inverted plate on the bottom; this protects the dolmas from direct heat when steaming.

    4. Rinse grape leaves in warm water; drain and cut off any stems. Place about 1 teaspoon of the cooled rice mixture in the center of a leaf. Fold in the sides and then roll into a cigar shape. Place in prepared pot. Repeat with remaining ingredients.

    5. Pour in just enough warm water to reach the bottom of the first layer of dolmas. Cover and simmer over low heat for 30 to 45 minutes, or until rice is totally cooked. Check the water level often and add more as necessary.
