What foods are best for making ahead, freezing and then having for a party.?

I am having a wedding and will be doing everything myself including the cake. What can I make ahead and freeze to help myself out?

    use Fresh veggies

    I would not attempt to freeze the cake, it will pick up any flavors around in the freezer

    you can freeze cake.

    casseroles can be frozen

    mashed taters shouldn't be frozen- the liquid content when frozen and thawed tends to make them runny

    au graten taters can be frozen

    ziti and pasta in sauce can be frozen

    meatballs in sauce can be frozen. takes a long time to thaw

    boneless chicken can be frozen

I used to have holiday parties for 400-700 people.  I'd start the day after Thanksgiving, and bake cakes & cookies for 2-3 weeks and freeze them.  The week before I'd start making appetizers and freezing them.  Just about any baked goods will freeze well (except meringue), and don't frost the cakes until they're thawed out later ...... Since you're getting married, if you're going to be buying a new refrigerator, get a French door refrigerator.  You can put whole trays of appetizers, sheet cakes, etc. in there.....

  5. Maybe you can make it the day ahead and not freeze it. You could refrigerate it instead. You could make little sandwiches, those cocktail sausages, and meatballs.
