  1. You should try some salba.   I am a vegetarian myself and I've added this to my diet and it has a lot of benefits to it.  It has 3 times more iron than spinach, and 6 times more calcium than mike...   Here is part of the information from the website:

Salba® is the richest whole food source of Omega 3 fatty acids and fibre found in nature. Every serving (12 grams or approximately 2 flat tablespoons) of Salba® provides over 2,400 mg of Omega 3s, over 4,500 mg of dietary fibre, with less than 0.5 net carbohydrates per serving. Gram for gram, Salba® provides six times more calcium than whole milk, three times more iron than spinach, and fifteen times more magnesium than broccoli. Salba® is all-natural, has no trans-fats, is gluten free...

I've tried the cookies and they taste good!

Hopefully after eating this - you won't be tired.

  2. Check out the Vegetarian Resource Group website (www.vrg.org).  They have lists of iron-rich and calcium-rich foods.  And as others have said, eat lots of vitamin C-rich foods.

However, your being tired could very well be another cause, and you may want to talk to your doctor about it.  Are you stressed?  Do you get enough sleep?  Are you eating enough?

  3. You could be tired due to lack of refreshing sleep, boredom, lack of exercise...many things.

However, back to your actual question...

Get yourself a good cast iron pan.  Season it well and use it at least once a day.  A cast iron pan will actually increase your daily iron in any foods you prepare in it.  The best is tomato sauce, or any other high acid foods.

You can google the seasoning, care and usage of cast iron pans and griddles.............or ask someone who uses them!

  4. Sorry but it's Spinach

  5. Also try increasing your vitamin C to help absorb more iron.

  6. i would go to the doctor and ask him to test your iron levels to make sure it isnt something else! I know you said yuck to spinach but have you tried it raw in  a salad?? its actually quite nice! mix it with some feta cheese, tomatoes and dressing and its fab! if you find yourself still not getting enough iron, you should try some supplements that are specifically designed for vegetarians, its the most hassle free way of getting enough iron without making drastic changes to your diet.

  7. eggplant, - its easy to grill it. and you can put it insandwiches and on pizzas. and loads of other dishes.

  8. Veg with dark green leaves, watercress, spring cabbage and (sorry) spinach

  9. Good vegetarian sources of iron include black beans, bran flakes, cashews, Cream of Wheat, garbanzo beans (chickpeas), GrapeNuts, kidney beans, lentils, navy beans, oatmeal, pumpkin seeds, raisins, soybeans, soymilk, sunflower seeds, tofu, and tomato juice.

Eating vitamin C-rich foods (e.g., citrus fruits and peppers) when you eat iron-rich foods is a good way to increase iron absorption.

Also, I'm not sure how old you are, but young women tend to have higher rates of anemia compared to the overall population. (This is true regardless of diet.) So you might want to take a multivitamin containing iron.

  10. If you don't like spinach, then go with blackstrap molasses.  Vitamin C enhances iron absorption, and molasses taken straight tastes horrible, so I would recommend stirring some blackstrap molasses into a small glass or orange juice.

Just 2 tbsp. of blackstrap molasses have 30% of your daily recommended intake of iron.

Pumpkin seeds also have a high amount of iron, and you can find them in most grocery stores next to the packages of sunflower seeds.

  11. Broccoli, collards, mustard and turnip greens are all good sources of iron. Iron-enriched cereals are great for vegetarians as well.
