Yob pretty much covered it, I can only add that I have run into DVD players that will read single layer 4.7 GB DVDR both + and -, but refuse to play anything on a dual layer 8.5 GB DVDR.

There is no single format which is guaranteed to play on any DVD player. Don't use DVD rewritable discs and that leaves you with DVD+r or DVD-r and of the two DVD+r will be playable on most (but not all) DVD players.

To improve the chances of compatibility you should also record at a low speed and of course use high quality discs (look for taiyo yuden).
