  1. like a white frosting, you can mix egg whites together and that makes a lights frosting almost like whip cream, oh! whip cream.

  2. I have tasted pineapple cupcakes/cakes and they were delicioius. Either a Butter Cream or a Cream cheese frosting would taste terrific on both strawberry and pineapple cupcakes - use some pineapple or strawberry juice in place of some of the milk called for in the recipe and top the cupcakes with some slices or small chunks of the fruit for decoration.  A coconut frosting with shredded coconut would also taste good on a pineapple cupcake.  Also chocolate Butter Cream or Cream Cheese frosting would taste good with the strawberry cupcakes.

    Butter Cream Frosting

    2 sticks of butter, softened

    2 cups powdered sugar

    1 tablespoon lemon juice

    1 teaspoon vanilla extract

    3-4 tablespoons milk

With an electric mixed whip butter until creamy; add powdered sugar, lemon juice and vanilla. Combine until well mixed. Add milk by the tablespoonful until desired constancy is reached.

    For chocolate:

Melt 2 squares of semi-sweet baking chocolate and add to the sugar butter mixture before adding milk. Then add milk by the tablespoonful until desired constancy is reached.

    Cream Cheese Frosting

1 8-ounce package cream cheese, softened

    1/2 cup butter, softened

    2 teaspoons vanilla

    1 teaspoon lemon juice

5-3/4 to 6-1/4 cups sifted powdered sugar

    Directions

Beat cream cheese, butter, vanilla and lemon juice with electric mixer until light and fluffy. Gradually add 2 cups of the powdered sugar, beating well. Gradually beat in additional powdered sugar to reach spreading consistency.  Cover and store the frosted cake in refrigerator. Makes about 4 cups.

Chocolate Cream Cheese Frosting: Prepare frosting as above, except beat 1/2 cup unsweetened cocoa powder into the cream cheese mixture and reduce powdered sugar to 5-1/4 to 5-3/4 cups.

If frosting is too stiff, add milk by the tablespoonful until desired consistency is reached.

You can use other flavors of extracts, juices such as orange juice or liqueurs if you want a more exotic flavor of frosting/icing.

By using lemon juice you eliminate the need for salt and it also cuts down on the sweetness of the frosting - I have been doing it this way for years and everybody loves my frosting.

    Billowy Coconut Frosting

    Ingredients

    2  Tbsp. water

    2  egg whites

    1/2  cup granulated sugar

    1/2  cup packed brown sugar

    1/2  tsp. cream of tartar

    1/2  tsp. vanilla

    1/2  tsp. coconut extract

1/2  cup sweetened flaked coconut or unsweetened shredded coconut

    Directions

Place water, egg whites, granulated sugar, brown sugar, and cream of tartar in the top of a double boiler or a water bath pan. Place over boiling water (bottom of upper pan should not touch water). Cook, beating with an electric mixer on high speed about 7 minutes or until frosting forms stiff peaks, scraping sides of pan occasionally. Remove from heat; add vanilla and coconut extract. Beat for 2 to 3 minutes more or until frosting is spreading consistency. Fold in 1/4 cup of the coconut. Sprinkle remaining coconut on frosted cake/cupcakes.  Makes 3-1/2 cups.

  3. Cream cheese icing would go fantastic with strawberry. Not only is it my favorite, but it pretty much goes with any kind of cake. But, you could also use whipped vanilla icing or just go strawberry on strawberry.

As for the pineapple, I have never tasted pineapple cupcakes but I have tried pineapple upside cake, and the sugar glaze they use on donuts works great with it.

  4. whip cream

  5. cream cheese would be the best i think almost like a mini strawberry cheesecake kind of taste. yum

  6. Cream cheese frosting would be good on either strawberry or pineapple .... or just sweetened whipped cream

  7. You can use chocolate or vanilla frosting for the strawberry cupcake>

( It would be like chocolate covered strawberries or strawberry Cream flavor)

I have never seen a pineapple cupcake mixes. You could buy vanilla frosting and put some pineapple flavoring in it for a neat twist.

  8. Cream cheese frosting would taste great on strawberry cupcakes, or strawberry frosting is good also.  As far as the pineapple cupcakes, I bet they'd be good and to frost, here is a good recipe.

1 box instant vanilla pudding mix

    1 large can crushed pineapple

    8 oz. cool whip

Drain most of pineapple juice. Mix pineapple and pudding mix. Add cool whip and spread on cupcakes.

This recipe is actually for Pineapple Ice Box Cake (or Pig Pickin' Cake). You'll have to keep the cupcakes refrigerated but this frosting tastes sooo good.

  9. Every strawberry cake I have ever had has had cream cheese icing and it goes perfectly with it.

    Never heard of pineapple cupcakes.

  10. How about this:

or a peanut butter cream cheese frosting replace the butter with peanut butter.

    Good Luck
