What great recipe for meat loaf can you share with me ? (family favorite?)

I want a juicy loaf that is not dense and is very flavorful.

  2. For more flavor and a juicier meatloaf, add about 1/4 cup of tomato juice, wine, or broth for each pound of meat.

    Bake in muffin tins or mini-loaf pans for individual servings.

    Use leftovers sliced in sandwiches or crumbled in sauces or chili.

    Replace some of the liquid in the recipe with red wine or dark beer.

    Add a cup of grated or shredded cheese to the meatloaf and top with more cheese about 10 minutes before it's done.

    Replace liquids with red wine or dark beer.

    Make the finished meatloaf extra fancy by frosting with mashed potatoes and topping with cheese; return to the oven and cook until the cheese is melted



  3. this is the one I use...the onions and g peppers being minced helps to incorporate them throughout the meat...also the picky eaters dont have to contend with big chunks...

    2 pounds ground beef

    1/2 c minced onion

    1/2 c minced bell pepper

    2 cloves garlic minced

    3/4 c bread crumbs

    1  egg beaten

    1/4 c milk

    4 T ketchup

    1 t  mustard

    1 t Worcestershire sauce

    1/2 t salt

    1/4 t pepper

    using your hands combine all ingredients (do not over work)

    place in loaf pan or form into a loaf on baking sheet.

    cook for 1 hour at 350..

    meanwhile....prepare your topping

    1 T oil

    2 T minced onion

    1 t salt

    2 T Worcestershire

    2 T brown sugar

    1/2 c water

    1/2 ketchup

    in a small sauce pan heat oil and cook onions &salt over low heat for 5 mins ......meanwhile combine Worcestershire,brown sugar,water,& ketchup...add to onions .....let simmer30 mins

    add sauce to meat loaf during the last  20 mins of baking.

        


  4. My favorite recipe is one from Food Network's Tyler Florence.  It is light, moist and very flavorful.  The tomato relish sauce is delicious.

  5. Mozzarella Stuffed Meat Loaf

    1 1/4 pounds ground turkey breast

    1 10-oz pkg frozen chopped spinach, thawed, squeezed dry

    1/2 cup minced onion

    1/2 cup seasoned bread crumbs

    1/4 cup chopped fresh parsley

    1 teaspoon dried oregano

    2 egg whites

    salt and ground black pepper, to taste

    1/4 teaspoon cayenne pepper (I omit when using beef)

    4 ounces fresh mozzarella, cubed

    2 tablespoons ketchup

    2 tablespoons Dijon mustard

    Preheat oven to 375.

    In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half.

    Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top.

    In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicing


  6. I use this recipe except i use 1/2 c breadcrumbs in place of the bread and i aslo put a little ketchup in the meatloaf itself to give it a little zing and of course put lots of ketchup on top.
