Depends on the border you're in.  Schengen allow up to 5 days for transit issues, but you'll need to document it if you have to be stamped as leaving legally.  Most countries require proof of onward travel when you arrive--if you're not a citizen or don't have work, study, or residence visa, for example.  Worst that can happen, generally, is fine and ban from re-entry.  Best that can happen is no one notices, and you travel onward without any funny stamps or notations in your passport.
