The egg is only really there as a binding agent for the ricotta cheese and if you are making a pan of lasagna its not really necessary.  It is more important to do if you are making the lasagna with small fresh pasta squares (like individual servings) because the cheese will then tend to run out the sides and look less attractive if you don't add the egg.  It really has little bearing on taste.

  4. Nothing. It turns out yummy either way. The eggs are used as a binding agent and may give it a little richer flavor from the yolks, but you probably won't notice a difference and don't need to put eggs if you don't want to.

  5. Lasagna is one of those things that is almost impossible to ruin.  You can add or subtract almost any ingredient, or change the amounts, and it'll still work.

  8. When I was in cooking school they had us make a recipe for lasagna that had chopped hard boiled eggs in it. It was the grossest-tasting thing.

    A couple of eggs to bind up the ricotta works.

I use an egg or two in the ricotta cheese filling between the layers.  All it really does is to help bind (firm up) the cheese.  I have used egg substitute with good results also.  And I suppose the eggs could add some flavor in the form of richness to the filling also.  If you don't have eggs, can't eat eggs or just don't want to use them, the lasagna should still turn out fine!

  12. the recipe I have uses parmesan cheese mixed with the ricotta and I guess it is a binder.  Never heard of the egg thing.

  13. Anytime you are using RICOTTA CHEESE as a filling, it is recomended that you use eggs to help hold the layer of cheese together as a layer.  I do use eggs in the ricotta when i make lasagna, but it looks like many other people do not, so it must turn out ok that way too.

    I have never put eggs in my lasagna....I do put 3 kinds of cheese....Ricotta, mozarrella, & Parm. Regeano...and I make my special meatballs then crumble them in my sauce...way better flavor..

    Does it come out better w/ eggs????

    I think with my recipe adding eggs would make it too rich.

  18. eggs are used for lasagna only to make the dough... it's 19 years that i've lived here in italy, since i was born... and i can swear that i have never had lasagna with eggs in the sauce!!! where did you see that nightmare???

    I am italian and here we use only white sauce and tomato sauce with minced meat, and the puff pastry (the lasagna).
