What happens if you go to the us embassy for a tourist visa, complete the interview but dont travel?

Uncle Sam just takes your money and runs. There's no penalty beyond the fact you've wasted your time and money. Some folks like to apply and keep the visa as a sort of insurance policy in case things go bad. But as long as your passport and visa remain valid, you're free to use it whenever you choose, or not use it at all.

what happens if you don't travel after approval of your interview?

I think one of the international airline's (US) didn't make profit out of you. lol

Afaik the visa just expires and if you want to travel after that date you will need to get a new one.
