  1. As the water evaporates many expected changes are visible ,the milk consistency changes it becomes thick & as the sugar caramelizes it takes on a pale creamish tint ,when tasted you will find it has a sweetish rich flavor ,if stirred constantly curdling does not occur .

    I am Indian,many of our Indian sweets are made with thickened milk & we stand by stirring diligently to avoid mishaps, slight smell of burnt milk can ruin the effect .
