What happens to the Olympic stadiums once the games are over?

Do the structures just sit there or are they used for other things?

It is the home for the Beijing soccer team.

Most of the time they use them as public facilities for recreation or for local sports teams.

Olympic Stadium in Atlanta is where the Atlanta Braves now play.  They recycle them.  I'm sure the Bird's Nest will be converted to a soccer pitch, baseball stadium, or other sporting venue

They're used for other events. Montreal's Olympic Stadium was where the Expos used to play, and now there are some football games and the Grey Cup is happening there this year.

Usually used for other events.  Sometimes altered.  I went to a place in germany that had an olympic ski jump still there.  People were using it.
