What happens to the left over food of catered buffets?

I mean, they must save things like pastas, salads, and desserts to reuse, but what about meats and other foods that would seem impractical to reuse? What do they do with all the left over food? I hope they don't just trash it.

  1. You can't reuse leftout foods due to sanitation.

    Laws state that restaurants MUST throw away unused food at close.


  2. Some stuff is saved. A lot of the time, the food will be taken back into the kitchen and the staff can eat it if they want, otherwise some things are disposed of.

  3. as far as i know.. if they're spoiled then they throw them away, but if it's still ok to eat then they chill them, then reheat them nd serve them again the next day...

  4. Some restaurants donate food to organizations such as Second Harvest (http://www.secondharvest.org/how_to_help... ) which helps to feed the hungry.

  5. Employees can take it home a lot of times, sometimes it is used in soups, other side dishes, and "specials" for the next day- at least that is what my restaurant did.

  6. Did you ever hear of the freegans?  Hopefully, they, or another group will take it.  I know at my workplace, the cafeteria staff will trash the food at catered events.  We always divide and conquer the left-overs.  It makes me sick to throw perfectly good food away.
