Thanks for the answers, but I'm looking for a scientific explination. What changes dose it go through, dose it thin, dose it expand, dose it assume a gaseous state? What?

Typically, nothing.  That is just an expression people use.  It is related to people that have a "hot temper".

However, you might have actually seen it if you've every pan-fried some really fresh hamburger or a steak . . . . .
