Question:

What happens when you hit the back of a jar that wont open?

And if you do it will open easily after, but why is that. I think has something to do with air that is pushing against the lid. But im not sure. please explain.

    I dont believe it has anything to do with air pressure.  I expect to have to do more with jarring the seal which then makes it easier to open.  Kind of like an impact wrench when removing rotors from a car.  You can try to get them loose all day by torque and they wont work.  But one or two hits form an impact driver and its loose.

    However, I wouldn't recommend hitting a jar (especially if it is glass) as there are far better alternatives such as hot water on the metal lid to make it expand.

  5. it makes the contents settle away from lid so that the vacuum is slightly released because it is no longer a solid mass holding the vacuum, but just lack of air ,so hitting jar also releases  air in jar that has accumulated in food solid mass ,thus you are no longer fighting against a mass, but the vacuum has been diminished enough to allow its easier release
