Is your class animal or crop based?  If animal-based, how about raising one-day-old leghorn chicks to fryer chicken age.  If plant-based, look into setting up a research trial on a crop of interest in your area with a local farmer.  If it is an agrobusiness class, you could have students job shadow someone for a day to get a hands-on experience of what that career is like.
