Settlers of Catan by far. I once owned more than 450 separate board games (divorce plays h**l with one's collections), but Die Siedler von Catan has always been my favorite. It has simple rules, a different board every time you play, and trading mechanics that make it amazingly social.

Go. Starters go 9x9, and even before you know, you get to play 19x19, and as it has handicaps, you can play with almost any level player.
