  1. what are you allergic to?

  2. Usually there's a blend of various peppers, lime juice or other citrus like lemon or orange juice, there may be onions, garlic, oil, vinegar.

Each chef makes their own recipe, like others do with barbecue sauce.

The best course is to ask about your specific allergens to whomever is doing the cooking.

It's a spicy and tasty dish, when properly prepared. There are also Jerk sauces and rubs available at the market, or by mail order. You can check the ingredients and make it yourself, to your taste.

    It is delicious!

    Edit: found you a recipe:

    Jerk Chicken

    6 green onions, chopped

    1 onion, chopped

1-3 jalapeno pepper, seeded and minced (we use habenero/scotch bonnet instead)

    3/4 cup soy sauce

    1/2 cup distilled white vinegar

    1/4 cup vegetable oil

    2 Tbs brown sugar

    1 Tbs chopped fresh thyme

    1/2 tsp ground cloves

    1/2 tsp ground nutmeg

    1/2 tsp ground allspice

1 1/2 lbs skinless, boneless chicken breast halves

1 In a food processor or blender, combine the green onions, onion, jalapeno pepper, soy sauce, vinegar, vegetable oil, brown sugar, thyme, cloves, nutmeg and allspice. Mix for about 15 seconds.

2 Place the chicken in a medium bowl, and coat with the marinade. Refrigerate for 4 to 6 hours, or overnight.

3 Preheat grill for high heat.

4 Lightly oil grill grate. Cook chicken on the prepared grill 6 to 8 minutes, until juices run clear.
