I know how to "fry" it, but sometimes I don't use enough flavoring in the flour mixture.

Or just give me your best fried chicken recipe, please.

Thank you!!

  1. use these.... garlic powder, smoked paprika, salt, pepper, and chili powder or cayenne pepper. if you have the following add them too..

    cumin

    all spice

    oregano

    curry powder.

don't be shy with the seasoning

  2. I like to add a little cayenne or red pepper to the flour mixture, it adds a little bit of a kick.

I also really like pretzel bredded chicken or Goldfish cracker chicken. You put the crackers/pretzels into a plastic bag and crush them really finely and use it as the bredding. It's a little bit different, but tastes really good.

  3. CRISPY FRIED CHICKEN

You have to start this 1 day ahead.

    4- 6 servings

    1 1/2 cup flour

1/2 cup Italian salad dressing ( I like to use Zesty )

    2 lb chicken parts

    1 tsp baking powder

    1 tsp paprika

    1/2 tsp sage

    1/4 tsp salt

    1/4 tsp pepper

    1 cup buttermilk

In small bowl, combine 1/2 cup flour and Italian salad dressing to make a paste

Spread mixture all over chicken pieces

    Cover and refrigerate overnight

    1 1/2 hours before serving

Combine 1 cup flour, baking powder and seasonings

    In another bowl put buttermilk

Dip pieces  in buttermilk then in the seasonings

In 10 inch skillet over med heat in 1/2 inch of oil

Cook chicken pieces til brown on all sides

    Turn once

Place a wire rack in a jelly roll pan and place chicken in single layers

Bake at 350 for 50 - 60 min until fork tender

    Kentucky Fried Chicken Spice

    1 tablespoon rosemary

    1 tablespoon oregano leaves

    1 tablespoon powdered sage

    1 teaspoon powdered ginger

    1 teaspoon marjoram

    1 1/2 teaspoons thyme

    3 tablespoons packed brown sugar

    3 tablespoons dry minced parsley

    1 teaspoon pepper

    1 tablespoon paprika

    2 tablespoons garlic salt

    2 tablespoons onion salt

2 tablespoons chicken bouillon powder (or 4 cubes, mashed)

1 package Lipton tomato Cup-a-Soup mix

Place all ingredients in blender and pulse for 3-4 minutes to pulverize, or rub through a fine strainer. Store in an airtight container so the spices will not lose their potency. Makes about 3/4 cup.

Add 1 ounce mix to every one cup of flour for coating chicken.

    DOWN-HOME FRIED CHICKEN SEASONING

    Preparation Total: 05

This blend was developed for people with a limited selection of spices on their shelf. It is a blend of salt and peppers, herbs, and spices balanced just right to complement your chicken. Just add 2 tablespoons to 1 cup of flour and you are ready to go. Dip your chicken pieces into an eggwash (1 egg and 3 tablespoons of milk, beaten), and then dredge in the flour. Repeat the procedure for a thicker, crispier crust. Fry.

    1 tablespoon curry powder

    1 tablespoon cayenne

    1 tablespoon basil

    1 tablespoon thyme

    1 tablespoon paprika

    1 tablespoon chili powder

    1 tablespoon turmeric

    1 tablespoon lemon pepper

    10 tablespoons salt

    1 tablespoon garlic powder

    2 tablespoons Freshly Cracked Peppercorns

    Combine all ingredients.

  4. I love McCormick's Montreal Chicken Seasoning.  Not only is the flavor great, it's really the only seasoning you need (add that and you are done).  The bottle says it's for the grill, but we use it on EVERYTHING; even pork.  A must have seasoning in my opinion.   If you can't find that, I would use seasoning salt, black pepper, garlic salt and a touch of cayenne.

  5. When mixing your seasonings with your flour, use seasoning salt, salt, garlic salt, and pepper.  Put in seasonings until the flour looks like an even mixture...you want to SEE the seasonings and you want to be able to smell them in the flour as well.  Try it and see what you come up with.

  6. Forget about frying your own chicken. McDonald's got you covered. Just try their all new southern chicken sandwich. It's just like grandma made it. Probably your grandma though.

  7. I like to mix sage, savory, seasoning salt, garlic powder and a little bit of citric acid for some heatless kick into the flour mixture.
