What interesting Jamaican recipes can you share?

I'm doing research into Jamaican cuisine and I'm pretty amazed that here in the UK the same 8-10 dishes appear in every place I have ever visited.

Jerk Chicken/meat

Fried Chicken

Escovitch Fish

Stewed Fish

Ackee and Salt-fish

Mutton Curry

Rice and Peas

Fried Dumplings

- with thyme being in everything - you get the picture.

Now I know Jamaican food must have evolved over the years, and more than one herb grows there. It has access to ample sea food and has been influenced by many cultures

If you know of any interesting recipes or new takes on classics then much appreciated. I am especially interested in healthy recipes due to the high rate of diabetes and heart problems in Jamaicans.

  2. -Platains.. either green or yellow ones. The green ones are fried twice. The twice fried ones taste like those plantain chips.

    -Kidney (sounds gross but it tastes good)

    -Curry goat/ chicken

    -Tongue (again, sounds gross but seriously, it tastes real good; other islands especially the spanish-speaking ones eat this too)

    -mackrell (wan type of fish, you can get it from the can in tomato sauce or buy the real thing)

    I've never even heard of mutton curry before..

  3. Those are some of the popular dishes but there is also red snapper, curried goat, fricassee chicken,  callaloo and more =)

    Among many of the spices grown in Jamaica are nutmeg, ginger, thyme, scotch bonnet peppers, which are integral distinct flavors of Jamaican cooking. The pungent thyme grows rampantly on the island and is found in the majority of Jamaican foods.

    Red Snapper



    Ingredients

    1 pound. fillet of fresh red snapper

    2 green peppers, chopped

    3 cloves garlic, minced

    2 tablespoons . olive oil

    1 onion, chopped

    1 scotch bonnet pepper(one of the hottest peppers, handle with gloves and remove seeds if you don't want it screaming hot.)

    Salt and pepper to taste

    Directions

    Cut red snapper fillets into 1 inch cubes. In a large frying pan, combine olive oil, garlic, green pepper, and onion. Sauté for 5-8 minutes over a medium hot flame.

    Add scotch bonnet into sizzling pan then add red snapper to mixture, and stir until coated well.

    Sprinkle salt and pepper, cover and cook for approximately 5 minutes. Stir and cook for another 5 minutes.

    Callaloo~



    Ingredients

    1 bunch callaloo ( or spinach).fresh, chopped

    2 ounces salt pork, chopped

    8 ounces coconut milk

    5 cups water

    1 large onion, finely chopped

    3 cloves garlic, minced

    8 ounces chopped okra

    8 ounces crab meat

    2 cloves garlic

    scotch bonnet to taste

    salt, pepper to taste

    Directions

    Place ingredients in a large stew pot except okra, crabmeat, and spices.

    Simmer until the salt pork is tender then add the okra and crab meat.

    Simmer for 5 minutes and season with salt, pepper, and scotch bonnet

  4. Jamaican Coconut Shrimp and Chicken Recipe



    INGREDIENTS

    2 tbsp. cooking oil

    2 cloves Jamaican garlic, minced

    1 small Jamaican onion, sliced

    1 med. Jamaican tomato, sliced

    ½ lb. raw shrimp

    ½ cup shredded cooked Jamaican chicken

    2 cup shredded young Jamaican coconut

    1 cup sliced celery

    2 cup bean sprouts

    1 tbsp. soy sauce

    1 tsp. salt

    ½ tsp. Jamaican black pepper



    PREPARATION

    1. Shell and de-vein shrimp and slice lengthwise. Heat oil; saute Jamaican garlic until brown. Stir in Jamaican onion and Jamaican tomato. Next add shrimp and chicken.

    2. Cook for 3 minutes. Add shredded Jamaican coconut and celery, cook for 2 minutes.

    3. Then add bean sprouts, broth, and soy sauce. Season with salt and pepper. Simmer for 5 minutes. Serve hot

  5. Jamaican-Style Greens

    2 lb Collard greens, kale or

    Mustard greens

    1/4 c Water

    1 1/2 tb Olive oil

    1 c Finely chopped onion

    1 sm Red jalapeno pepper, stemmed

    Seeded and finely chopped

    1/8 ts Allspice

    1/4 ts Salt

    Freshly ground black peppere

    2 ts Lemon or lime juice

    Instructions:

    1. Wash the greens well in several changes of water. Remove the thick rib

    from the center of the leaves; chop coarsely. 2. Put the greens with 1/4

    cup water into a large pot. Place over medium heat, cover and cook until

    wilted, about 10 minutes. Stir often. Drain. 3. Heat the olive oil in a

    skillet over medium heat. Add the onion and jalapeno; saute 5 minutes. Stir

    in the greens, allspice, salt and pepper; saute 5 minutes. 4. Stir in thelime juice and serve.
