  1. It's Sweet & Sour!!

Agrodolce is a preparation based on the combination of two elements, sour and sweet. Although vinegar and sugar are commonly the two basic elements, they can be accompanied or replaced by many other ingredients with the same characteristics, e.g., candied citrus, raisins, chocolate, balsamic vinegar, lemon. The Arabs, who have long favored sour-sweet condiments, probably introduced this sauce in Sicily.

    8 oz. vinegar

    4 oz. white wine

    2 tbs. sugar

Simmer vinegar and wine till reduced by one third, add sugar, mix well until dissolved, and remove from fire. (The sugar can be reduced to one tablespoon if less sweetness is desired.)

Usually this sauce goes well with meat, fish, several vegetables, particularly for pearl onions, or as an addition to beef, venison, or lamb reductions, to be afterwards used as sauces.

  2. Agro-Dolce means Sweet-Sour.

There are different varieties, depending on the country of origin.

The most well known being the chinese.

The sauce usually has sugar, vinegar, cornstarch and some type of fruit

Here are a couple of recipes:

    Sweet Sour Sauce

    INGREDIENTS

    2 cups water

    2/3 cup distilled white vinegar

    1 1/2 cups white sugar

1 (6 ounce) can tomato paste

1 (8 ounce) can pineapple tidbits, drained

    3 tablespoons cornstarch

    DIRECTIONS

In a medium saucepan over medium heat, mix together water, distilled white vinegar, white sugar, tomato paste, pineapple tidbits and cornstarch. Cook, stirring occasionally, 15 minutes, or until mixture reaches desired color and consistency.

    Sweet Sour Sauce

    INGREDIENTS

    3/4 cup white sugar

    1/3 cup white vinegar

    2/3 cup water

    1/4 cup soy sauce

    1 tablespoon ketchup

    2 tablespoons cornstarch

    DIRECTIONS

Place the sugar, vinegar, water, soy sauce, ketchup and cornstarch in a medium saucepan, and bring to a boil. Stir continuously until the mixture has thickened.

(My own recipe is a mix of the two...I use the soy sauce and ketchup, not the tomato paste, and I use a small jar of apricot jam instead of the pineapple. And as for vinegar, whichever one I have on hand, but I like it best with apple cider vinegar)
