  1. Emulsions are colloidal solutions obtained by mixing two liquids. If oil is acting as dispersed phase and water as dispersion medium, the emulsion formed is named as oil-in-water type i.e. O/W type. e.g. MILK which contains liquid proteins dispersed in water.
