As has been stated before it's Mountbatten-Windsor. Although really the Windsor shouldn't be there because

a) It's the Queens maiden name and should have been dropped when she married Prince Philip from the house of Mountbatten.She kept it as a tribute to her father, George VI.

b)Windsor isn't the family name anyway. It's Saxe-Coburg-Goethe. King George V thought it advisable to change it during the First World War as it was a little too german.

I believe I remember that he used Mountbatten when signing the  marriage certificate at his marriage to Diana.  I know that he had a choice of what he could use.  Windsor is the current name of this Royal family,having been changed from a German sounding name about the time of the First World War, but apparently as individuals, they have the option of using other names.
